Perfect Keto Rosemary Garlic Butter Lamb Chops
The ultimate 15-minute low-carb dinner that tastes like a 5-star steakhouse meal.
Ingredients:
Lamb Chops: 4-6 bone-in loin or rib chops (about 1-inch thick)
Butter: 3-4 tbsp Unsalted Grass-fed Butter
Fresh Rosemary: 3 sprigs
Garlic: 4 cloves, smashed or minced
Oil: 1 tbsp Avocado Oil or Extra Light Olive Oil (high smoke point is best)
Seasoning: Kosher salt and freshly cracked black pepper to taste
Instructions:
1. Prep the Meat: Pat the lamb chops completely dry with paper towels. Season generously with Kosher salt and black pepper on both sides. Let them sit at room temperature for 10-15 minutes.
2. The Sear: Heat a cast-iron skillet over medium-high heat. Add the oil. Once the pan is smoking slightly, place the chops in the skillet. Sear for 3-4 minutes without moving them to get that perfect brown crust.
3. Flip: Turn the chops over and cook for another 2-3 minutes.
4. The Butter Baste: Reduce heat to medium. Toss in the butter, rosemary sprigs, and garlic.
5. Baste:As the butter foams, tilt the pan slightly and use a large spoon to continuously pour the flavored butter over the lamb chops for the final 2 minutes.
6. Rest: Remove from the pan and let the meat rest for 5 minutes. This keeps the juices inside!
