Cheesy Keto Beef Skillet: A Quick & Comforting Low-Carb Meal
Looking for a hearty dinner that fits your Keto lifestyle?This Cheesy Beef and Vegetable Skillet is the perfect one-pan solution. It’s loaded with tender beef slices, crisp vegetables, and a golden, bubbly layer of melted cheese. It's so delicious, you won't even realize it's low-carb!
Ingredients:
Beef (Flank Steak or Sirloin): 300g, thinly sliced into bite-sized pieces.
Cheese:1 cup, shredded (Mozzarella or Cheddar work best for that perfect stretch).
Vegetables:
1 cup cauliflower florets (cut small).
1 cup green beans (trimmed).
1/2 cup mushrooms, sliced.
Aromatics & Oil:
2 tbsp olive oil.
3 cloves garlic, minced.
1/2 small onion, finely diced.
Seasoning:Salt, cracked black pepper, 1 tsp Italian herbs (or oregano), and a pinch of chili flakes (optional).
Fresh Finish: A squeeze of fresh lemon juice and chopped fresh parsley.
Instructions:
1. Sear the Beef: Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat. Add the beef slices and sear until browned on both sides. Season with salt and pepper. Remove the beef from the skillet and set aside.
2. Sauté the Veggies: In the same skillet, add the remaining oil. Toss in the onion, garlic, cauliflower, green beans, and mushrooms. Stir-fry for 5-7 minutes until the vegetables are tender yet still have a slight crunch.
3. Combine:Add the cooked beef back into the skillet with the vegetables. Sprinkle with Italian herbs and chili flakes, stirring everything together for another minute.
4. Melt the Cheese:Lower the heat. Spread the shredded cheese evenly over the top of the beef and vegetable mixture. Cover the skillet with a lid for 2-3 minutes until the cheese is perfectly melted and bubbly.
5. Serve:Finish by squeezing a fresh lemon wedge over the dish and sprinkling with chopped parsley for a burst of brightness.
