Ingredients:

Chicken Breast: 2 large (cut into 1-inch bite-sized pieces)
Heavy Cream:1/2 cup
Fresh Spinach:1 cup
Sun-dried Tomatoes:1/4 cup (chopped)
Parmesan Cheese:1/4 cup (freshly grated)
Garlic:3 cloves (minced)
Olive Oil or Butter: 2 tablespoons
Italian Seasoning:1 teaspoon
Salt & Pepper: to taste

Instructions:

1. Sear the Chicken: Heat the olive oil or butter in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the pan. Cook until golden brown and cooked through. Remove the chicken from the pan and set aside.
2. Sauté the Aromatics: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sun-dried tomatoes and Italian seasoning, stirring for another minute.
3. Make the Creamy Sauce:Pour in the heavy cream and sprinkle in the Parmesan cheese. Stir continuously over medium heat until the sauce begins to thicken slightly.
4. Combine and Serve:Add the fresh spinach to the sauce and cook until it begins to wilt. Return the cooked chicken to the pan and toss everything together to coat it in the creamy sauce. Let it simmer for 1–2 minutes to allow the flavors to meld.
